turmeric spice
Turmeric contains curcumin which is a powerful anti-inflammatory phytochemical.
This gives the spice a distinctive flavour and vivid yellow color.
It has peppery warm and bitter flavourand a mild fragrance.
Another variety , usually known as "white turmeric",is lighter in color.
It is not only used in cooking in southeast asia but also the young roots are eaten raw or blanched .
